Tripe Kebabs

La Ferté-Macé’s fame extends beyond Normandy with its tripe kebabs, which has been joined by andouilles, loose tripe and tripounettes. Skewered tripe is made almost exclusively in La Ferté-Macé, but it is sold on a large scale throughout France and even abroad. The Confrérie de la Tripière Fertoise helps to promote this speciality from La Ferté.
